Prepare the garlic and herb mixture
Finely chop the garlic cloves, rosemary leaves, and thyme leaves. In a small bowl, combine the chopped garlic, rosemary, thyme, olive oil, salt, and black pepper. Mix well to form a paste.
Prepare the prime rib roast
Place the prime rib roast on a cutting board, fat side up. Using a sharp knife, score the fat cap in a crisscross pattern, making shallow cuts about 1/2-inch apart.
Apply the garlic and herb mixture
Rub the garlic and herb mixture all over the prime rib roast, making sure to get it into the scored cuts and on all sides of the roast.
Let the roast rest
Place the seasoned prime rib roast on a rack in a roasting pan. Let it sit at room temperature for 30 minutes to allow the flavors to meld.
Preheat Oven
Preheat the oven to 450°F (230°C).
Roast the prime rib
Place the roasting pan with the prime rib in the preheated oven. Roast for 20 minutes to sear the outside.
Reduce the oven temperature and continue roasting
Reduce the oven temperature to 325°F (165°C). Continue roasting the prime rib for about 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Let the roast rest and serve
Remove the prime rib roast from the oven and let it rest for 20-30 minutes before slicing and serving.
