In a bowl, mix the brown sugar and peanut butter until well combined. Divide the mixture into 20 equal portions and roll each portion into a small ball. Set aside.

Make the dough

In a large bowl, mix the glutinous rice flour and water until a smooth dough forms. Knead the dough for 5 minutes until it becomes elastic.

Wrap the filling

Divide the dough into 20 equal portions. Flatten each portion into a small disc. Place a peanut butter filling ball in the center of each disc and wrap the dough around the filling, sealing it tightly. Roll the filled dough into a smooth ball.

Prepare the ginger syrup

Peel and slice the ginger. In a pot, combine the sliced ginger, sugar, and 4 cups of water. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes. Remove the ginger slices from the syrup.

Cook the rice balls

In another pot, bring water to a boil. Gently drop the rice balls into the boiling water and cook for 5-7 minutes or until they float to the surface. Remove the rice balls with a slotted spoon and transfer them to the ginger syrup.

Serve

Let the rice balls soak in the ginger syrup for 5 minutes. Serve the Glutinous Rice Balls warm in bowls with the ginger syrup.
