Prepare the pie crust

Peel, core, and slice the apples into 1/4-inch thick slices. In a large bowl, toss the apple slices with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch.

Preheat the oven

Preheat the oven to 375°F (190°C).

Roll out the crust

On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish, pressing it firmly against the bottom and sides. Trim the excess dough around the edges.

Roll out the second disc of dough into a 12-inch circle. Place it on top of the filling and trim the excess dough. Crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
