Prepare the pie crust
In a large bowl, mix the flour and salt. Cut the cold butter into small pieces and add to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until the dough holds together.
Chill the dough
Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling
Peel, core, and slice the apples into 1/4-inch thick slices. In a large bowl, toss the apple slices with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch.
Preheat the oven
Preheat the oven to 375°F (190°C).
Roll out the crust
On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish, pressing it firmly against the bottom and sides. Trim the excess dough around the edges.
Fill the pie
Pour the apple filling into the pie crust, mounding it slightly in the center.
Add the top crust
Roll out the second disc of dough into a 12-inch circle. Place it on top of the filling and trim the excess dough. Crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
Egg wash
In a small bowl, beat the egg. Brush the top crust with the beaten egg.
Bake the pie
Place the pie on a baking sheet and bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Cover the edges with foil if they start to brown too quickly.
Cool and serve
