Prepare the steak

Remove the steak from the refrigerator 30 minutes before cooking to allow it to come to room temperature. Season the steak on both sides with salt and black pepper.

Prepare the sauce

Thinly slice the scallions. Roughly chop the cilantro leaves and tender stems. Peel and mince the garlic cloves. In a bowl, mix the sliced scallions, chopped cilantro, minced garlic, olive oil, juice of 2 limes, remaining salt, and black pepper. Set the sauce aside.

Grill the steak

Preheat the grill to high heat. Grill the steak for 4-5 minutes per side for medium-rare, or longer if desired. Remove the steak from the grill and let it rest on a cutting board for 5 minutes.
