Read instructions and get ready to cook
Prepare the vegetables
Finely chop the onion, mince the garlic cloves, and grate the ginger.
Prepare the potatoes
Peel the potatoes and cut them into 1-inch cubes.
Prepare the herbs
Finely chop the fresh cilantro leaves.
Brown the lamb
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground lamb and cook, breaking it up with a wooden spoon, until browned, about 6-8 minutes.
Add vegetables and spices

Add tomatoes and potatoes
Stir in the diced tomatoes and cubed potatoes. Add water and bring the mixture to a simmer.
Simmer the curry
Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the potatoes are tender and the sauce has thickened.
