Read instructions and get ready to cook
Prepare the chicken
Rinse the whole chicken and pat dry with paper towels. Rub the chicken all over with salt.
Prepare aromatics
Crush the garlic cloves. Slice the ginger into thick pieces. Cut the green onions into 2-inch sections.
Boil the chicken
Place the chicken in a large pot. Add the crushed garlic, ginger slices, green onion sections, and enough water to cover the chicken. Bring to a boil, then reduce heat and simmer for 30 minutes.
Prepare rice
Rinse the jasmine rice until the water runs clear. Drain well.
Cook the rice
In a pot, combine the drained rice, chicken stock, pandan leaves, and salt. Bring to a boil, then reduce heat to low, cover and cook for 15 minutes until rice is tender. Fluff with a fork.
Steam the chicken
Remove the chicken from the pot and place in a steamer basket. Steam over rapidly boiling water for 30 minutes until cooked through.
Prepare garnishes
Slice the cucumber thinly. Chop the remaining green onion finely.
Carve and serve
Allow the chicken to cool slightly, then carve into serving pieces. Serve the chicken with the fragrant rice, sliced cucumbers, chopped green onions, chili sauce and soy sauce on the side.
