Steps
Read instructions and get ready to cook
Boil eggs
Place eggs in a pot and cover with cold water. Bring to a boil, then remove from heat and let stand, covered, for 12 minutes.
Cool eggs
Drain hot water and place eggs in an ice bath to cool completely.
Peel eggs
Gently peel the cooled eggs.
Halve eggs
Cut eggs in half lengthwise.
Remove yolks
Carefully remove yolks and place them in a bowl.
Prepare filling
Mash yolks with mayonnaise, mustard, half of the paprika, salt, and pepper until smooth.
Fill egg whites
Spoon or pipe the yolk mixture back into the egg white halves.
Create pumpkin look
Use the back of a knife to gently create vertical lines on the filling to resemble pumpkin ridges.
Add color
Lightly dust the tops of the "pumpkins" with the remaining paprika.
Add stems
Insert a small piece of chive into the top of each "pumpkin" to create a stem.
Chill and serve
Refrigerate until ready to serve. Best served cold.
