Soak Skewers and Preheat

Soak 8 wooden skewers in water for 10 minutes. Preheat grill pan or grill to medium-high heat.

Cut Cheese and Vegetables

Cut halloumi into 1 inch cubes. Cut red bell pepper and red onion into 1 inch pieces.

Make Glaze

In a bowl, whisk harissa paste, honey, 1 tablespoon olive oil, 1/4 teaspoon salt, and black pepper. Cut lemon in half and squeeze in the juice from 1/2 lemon. Whisk until smooth.

Skewer

Thread halloumi, bell pepper, and onion alternately onto the soaked skewers, packing pieces close together.

Brush skewers generously with the harissa-honey glaze on all sides. Sprinkle 1/4 teaspoon salt over the skewers.

Oil the grill grates or pan with 1/2 tablespoon olive oil. Grill skewers 2 to 3 minutes per side until halloumi is golden and vegetables are lightly charred.

Warm Remaining Glaze

Pour remaining glaze into a small pan. Simmer 1 minute over low heat to thicken slightly. Turn off heat.

Bring water to a boil in a small pot. Stir in couscous, 1/2 teaspoon salt, and 1/2 tablespoon olive oil. Turn off heat, cover, and rest 5 minutes. Fluff with a fork. Zest the remaining 1/2 lemon over couscous and squeeze in its juice. Stir.

Brush hot skewers with the warmed glaze to lacquer the surface.
