Read instructions and get ready to cook
Prepare the vegetables
Wash all vegetables thoroughly. Remove stems from kale and roughly chop the leaves. Cut broccoli into small florets. Dice zucchini. Peel and dice onion.
Prepare the garlic
Peel and mince the garlic.
Sauté the aromatics
Heat oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
Add broccoli and zucchini
Add broccoli florets and diced zucchini to the pot. Cook for 3-4 minutes, stirring occasionally.
Add broth and simmer
Pour in vegetable broth. Add salt and pepper. Bring to a boil, then reduce heat to simmer. Cook for 10 minutes until vegetables are tender.
Add leafy greens
Add chopped kale to the pot. Simmer for 5 minutes. Add spinach and cook for 2 more minutes until wilted.
Prepare the lemon
Wash the lemon. Zest to get 1 teaspoon of zest. Cut in half and squeeze to extract juice.
Blend the soup
Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches. Return to pot if using a blender.
Finish the soup
Add lemon juice and zest. Stir in remaining olive oil. Taste and adjust seasoning with remaining salt and pepper if needed.
Serve
Ladle into bowls. Serve hot.
