Preheat the oven

Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Cook the rice

Rinse the rice under cold water. In a medium saucepan, combine rice with 4 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender. Drain any excess water and set aside.

Peel and dice the onion. Peel and mince the garlic cloves. No need to thaw the frozen peas and carrots.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant.

If not already in pieces, shred or chop the turkey into bite-sized pieces. Add turkey to the skillet with the onions and garlic. Stir to combine and heat through for 2-3 minutes. Season with half of the salt and pepper.

Add the frozen peas and carrots to the skillet. Stir to combine with the turkey mixture. Cook for 2-3 minutes until vegetables begin to thaw.

Pour in 1 cup of chicken broth. Bring to a simmer and cook for 3-4 minutes until vegetables are tender. Remove from heat.

In a large bowl, combine the cooked rice with the turkey mixture. Add remaining salt and pepper. Stir well to ensure even distribution of ingredients.

Transfer half of the rice and turkey mixture to the prepared baking dish. Spread evenly across the bottom.

Sprinkle 1 cup of shredded cheddar cheese over the first layer.
