Prepare the vegetables
Wash all vegetables thoroughly. Peel and dice carrots. Cut cauliflower into small florets. Peel and cube potatoes. Shred or chop cabbage. Dice tomatoes. Dice onion. Mince garlic. Remove seeds from pepper and dice.
Sauté the aromatics

Add firm vegetables
