Preheat Oven
Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin.
Cook Turkey
In a large skillet over medium heat, cook the ground turkey until browned and no longer pink. Drain any excess fat and set aside.
Prepare Vegetables
Grate the zucchini, finely chop the red bell pepper and onion, and mince the garlic cloves. Finely chop the fresh parsley and basil.
Mix Wet Ingredients
In a medium bowl, whisk together the eggs and milk.
Mix Dry Ingredients
In a large bowl, whisk together the whole wheat flour, baking powder, salt, and black pepper.
Combine Ingredients
Add the cooked turkey, grated zucchini, chopped red bell pepper, onion, garlic, parsley, and basil to the dry ingredients. Pour in the egg mixture and stir until just combined.
Fill Muffin Tin
Divide the batter evenly among the greased muffin cups.
Bake Muffins
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and Serve
Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer the muffins to a wire rack to cool completely before serving.
