Read instructions and get ready to cook
Prepare the Pan
Line a baking sheet with parchment paper or a silicone baking mat. Have all ingredients measured and ready before starting.
Combine Sugar Ingredients
In a large, heavy-bottomed saucepan, combine sugar, corn syrup, honey, and water.
Heat the Mixture
Place the saucepan over medium heat and stir until sugar dissolves completely.
Boil Without Stirring
Once sugar is dissolved, stop stirring and bring mixture to a boil. Insert a candy thermometer and cook until mixture reaches 300°F (150°C), or hard crack stage.
Add Vanilla
Remove from heat and quickly stir in vanilla extract.
Add Baking Soda
Working quickly, add baking soda and whisk vigorously for about 5 seconds. The mixture will foam up dramatically.
Pour Onto Prepared Pan
Immediately pour the foaming mixture onto the prepared baking sheet. Do not spread or touch it.
Cool Completely
Allow the honeycomb to cool completely at room temperature, about 30 minutes.
Break Into Pieces
Once completely cooled and hardened, break the honeycomb into pieces.
Store
Store in an airtight container, separating layers with parchment paper, in a cool, dry place.
