Read instructions and get ready to cook
Prepare lemons
Zest and juice the lemons. You should have about 1/2 cup of juice and 2 tablespoons of zest.
Combine ingredients
In a heatproof bowl, whisk together the lemon juice, zest, sugar, and salt.
Add butter

Combine all ingredients

Cook the curd
Place the bowl over a pot of simmering water (double boiler method), ensuring the bottom doesn't touch the water.
Stir continuously
Cook the mixture, stirring constantly with a wooden spoon or silicone spatula, for about 10 minutes.
Check consistency
The curd is ready when it coats the back of the spoon and leaves a clear path when you run your finger through it.
Strain the curd
Remove from heat and strain through a fine-mesh sieve into a clean bowl to remove any lumps or zest.
Cool and store
Cover the surface with plastic wrap to prevent a skin from forming. Let cool to room temperature, then refrigerate.
