Read instructions and get ready to cook
Cook Lentils
Rinse red lentils. Add to a pot with 2 cups water. Boil for 15 minutes until soft. Drain excess water.
Roast Sweet Potatoes
Wash sweet potatoes. Cut into small cubes. Place on baking sheet, drizzle with olive oil, salt, and pepper. Roast at 400°F (200°C) for 20 minutes.
Prepare Aromatics
Peel garlic and ginger. Mince finely.
Make Yogurt Sauce
In a bowl, mix yogurt, minced garlic, minced ginger, turmeric, cumin, and juice of lemon. Stir until smooth.
Chop Herbs
Wash and finely chop fresh cilantro.
Assemble Wraps
Warm flatbreads. Add a layer of lentils, roasted sweet potatoes, chopped cilantro, and drizzle with yogurt sauce. Roll into wraps.
