Prepare chicken
Cut chicken thighs into 1-inch pieces.
Make marinade
In a bowl, mix yogurt, ginger paste, garlic paste, 1 teaspoon garam masala, turmeric, red chili powder, 1 teaspoon salt, and lemon juice.
Marinate chicken
Add chicken to the marinade, coat well, and refrigerate for 2 hours.
Prepare coating
In a shallow dish, mix flour, cornstarch, remaining garam masala, baking powder, and 1 teaspoon salt.
Beat eggs
In another bowl, beat the eggs.
Heat oil
In a deep fryer or large pot, heat oil to 350°F (175°C).
Coat chicken
Dip each marinated chicken piece in beaten egg, then coat in the flour mixture.
First fry
Fry chicken in batches for 3 minutes, until lightly golden. Remove and drain on paper towels.
Second fry
Increase oil temperature to 375°F (190°C). Fry chicken again for 1-2 minutes until deep golden and crispy.
Drain
Remove chicken and drain on fresh paper towels.
Season
While still hot, sprinkle chicken with chaat masala.
Garnish and serve
Garnish with chopped cilantro and serve hot with your favorite chutney or sauce.
