Read instructions and get ready to cook
Prepare rice
Rinse 1 cup of rice in cold water until the water runs clear.
Cook rice
Add rinsed rice and 2 cups of water to a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.
Rest rice
Remove pot from heat and let it sit, covered, for 5 minutes. Then fluff with a fork.
Prepare vegetables
While rice cooks, julienne the carrot and chop the green onions. Mince the garlic.
Make sauce
In a small bowl, mix gochujang, soy sauce, sesame oil, minced garlic, and brown sugar.
Cook beef
In a skillet over medium-high heat, cook ground beef until browned. Add half of the sauce mixture and cook for another 2 minutes.
Cook vegetables
In the same skillet, sauté carrots for 2 minutes. Add spinach and cook until wilted.
Fry eggs
In a separate pan, fry eggs sunny-side up or to your preference.
Assemble bowls
Divide cooked rice between two bowls. Top with cooked beef, sautéed vegetables, and fried egg.
Garnish and serve
Drizzle remaining sauce over the bowls. Sprinkle with chopped green onions and serve immediately.
