Steps

Read instructions and get ready to cook

1
Preheat oven & prepare baking dish

Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish and line with parchment paper.

2
Cook lentils

Rinse the lentils and cook them in 2 cups of water until tender, about 15-20 minutes. Drain and let cool.

3
Process lentils

In a food processor, process the cooked lentils until smooth.

4
Mix dry ingredients

In a separate bowl, whisk together the cocoa powder, baking powder, and salt.

5
Mix wet ingredients

In another bowl, beat the eggs, melted coconut oil, maple syrup, and vanilla extract until well combined.

6
Combine all ingredients

Add the lentil puree and dry ingredients to the wet ingredients. Mix until just combined.

7
Stir in chocolate chips

Fold in the dark chocolate chips.

8
Pour batter into baking dish

Pour the batter into the prepared baking dish and spread evenly.

9
Bake the brownies

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

10
Cool and serve

Allow the brownies to cool in the baking dish for at least 15 minutes before cutting into 16 squares. Enjoy!
