Read instructions and get ready to cook
Rinse the lentils
Rinse the green lentils under cold water until the water runs clear. Set aside to drain.
Prepare the vegetables
Peel and finely chop the onion. Peel and dice the carrots. Dice the celery stalks. Remove the seeds and dice the bell pepper. Peel and mince the garlic cloves.
Sauté the vegetables
Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, celery, and bell pepper. Sauté for 5-7 minutes until the vegetables start to soften. Add the minced garlic and cook for another minute.
Add lentils, tomatoes, and seasonings
Add the rinsed lentils, canned tomatoes (with their juice), cumin, paprika, coriander, salt, and black pepper to the pot. Stir to combine.
Add broth and simmer
Pour in the vegetable broth and stir. Bring the mixture to a boil, then reduce heat to low, cover the pot, and simmer for 30-35 minutes or until the lentils are tender.
Adjust seasoning and serve
Taste the lentils and adjust the seasoning if needed. Roughly chop the parsley leaves. Stir in half of the chopped parsley. Serve the Lentils with Veggies hot, garnished with the remaining parsley.
