Grate marrow
Grate the marrow (zucchini) using a box grater or a food processor with a grating attachment.
Squeeze out excess moisture
Place the grated marrow in a clean kitchen towel and squeeze out as much excess moisture as possible.
Mix fritter batter
In a large bowl, combine the grated marrow, eggs, breadcrumbs, all-purpose flour, salt, and black pepper. Mix well until a thick batter forms.
Chop vegetables
Peel and chop the onions. Peel and mince the garlic cloves. Cut the tomatoes into small chunks.
Heat oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Fry fritters

Gently place the fried marrow fritters into the tomato sauce, making sure they are partially submerged.
Simmer fritters in sauce
Reduce the heat to low, cover the skillet, and let the fritters simmer in the sauce for 15-20 minutes or until the flavors have melded together and the fritters are heated through.
