Preheat the oven

Preheat oven to 375°F (190°C).

Prepare the muffin tin

Grease a 12-cup muffin tin with oil. Alternatively, line with paper liners.

Prepare the onion

Peel and finely dice the onion.

Sauté the onion

In a small skillet, cook diced onion over medium heat until translucent, about 3-4 minutes. Let cool slightly.

Prepare the peas

If using frozen peas, thaw them. If using fresh peas, blanch in boiling water for 2 minutes, then cool.

Beat the eggs

In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.

Prepare the cheese

Grate the cheese if not already shredded.

Combine ingredients

Add sautéed onion, peas, and 3/4 cup of cheese to the egg mixture. Stir to combine.

Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.

Sprinkle the remaining cheese on top of each frittata.
