Toast the chiles

Remove the stems and seeds from the guajillo and ancho chiles. Toast the chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.

Soak the chiles

Place the toasted chiles in a bowl and cover them with hot water. Let them soak for 30 minutes until softened.

Prepare the vegetables

Roughly chop the tomatoes and onion. Peel the garlic cloves.

Blend the mole sauce

In a blender, combine the soaked chiles, chopped tomatoes, onion, garlic, almonds, raisins, corn tortilla, Mexican chocolate, cumin, cinnamon, oregano, salt, and black pepper. Blend until smooth, adding chicken broth as needed to achieve a thick, sauce-like consistency.

Brown the chicken

Heat the vegetable oil in a large pot over medium-high heat. Add the chicken thighs and cook until browned on all sides, about 6-8 minutes.
