Cook the egg noodles

Bring a large pot of salted water to a boil. Add 8 oz of egg noodles and cook according to package instructions until al dente. Drain the noodles and set aside.

Prepare the vegetables

While the noodles cook, finely chop 1 onion and mince 3 garlic cloves. Slice 1 lb of cremini mushrooms.

Sauté the vegetables

In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes, or until the onion is softened and translucent.

Add the mushrooms

Add the sliced mushrooms to the skillet and cook for 8-10 minutes, or until the mushrooms have released their moisture and are lightly browned.

Add flour and broth

Sprinkle 2 tablespoons of all-purpose flour over the mushroom mixture and stir to combine. Gradually pour in 1 cup of vegetable broth, stirring constantly to prevent lumps from forming.

Reduce the heat to low and stir in 1/2 cup of sour cream, 1 tablespoon of Dijon mustard, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Simmer for 5 minutes, or until the sauce has thickened.
