Cook bacon
In a large skillet, cook the bacon over medium heat until crisp, about 8-10 minutes. Remove the bacon from the skillet and set aside on a paper towel-lined plate to drain. Once cooled, chop the bacon into small pieces.
Prepare vegetables
While the bacon cooks, clean the mushrooms and slice them. Peel and thinly slice the shallot. Peel and mince the garlic cloves.
Sauté mushrooms
In the same skillet, add the butter to the bacon fat and melt over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 8-10 minutes.
Add shallot and garlic
Add the sliced shallot and minced garlic to the skillet with the mushrooms. Sauté until the shallot is softened and the garlic is fragrant, about 2-3 minutes.
Season and add bacon
Sprinkle the mushroom mixture with salt and black pepper, and stir to combine. Add the chopped bacon to the skillet and stir to distribute evenly.
Serve
Transfer the mushrooms with bacon to a serving dish and serve hot.
