Clean the mussels
Rinse the mussels under cold water, scrubbing them to remove any dirt or debris. Discard any mussels that are open, cracked, or damaged.
Prepare the vegetables and herbs
Finely chop the onion. Mince the garlic cloves. Roughly chop the tomatoes. Finely chop the parsley and thyme leaves.
Sauté the onion and garlic
Heat the olive oil in a large, deep pot over medium heat. Add the chopped onion and minced garlic to the pot and sauté until softened and fragrant, about 5 minutes.
Add the tomatoes and wine
Add the chopped tomatoes, white wine, bay leaves, salt, black pepper, and red pepper flakes to the pot. Stir to combine and bring the mixture to a simmer.
Add the mussels
Add the cleaned mussels to the pot and stir to coat them with the sauce. Cover the pot and steam the mussels for 6-8 minutes, or until they have opened.
Add the herbs
Remove the pot from the heat and discard any mussels that have not opened. Stir in the chopped parsley and thyme.
Serve
Serve the Mussels in Wine and Tomato Sauce hot, with crusty bread to soak up the broth.
