Prepare the vegetables
Peel and finely chop the onion. Remove the seeds and dice the bell pepper. Peel and mince the garlic cloves.
Sauté the vegetables
In a large, deep skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for 5 minutes or until the vegetables are softened. Add the minced garlic and cook for 1 minute until fragrant.
Add spices and rice

Add tomatoes and broth

Add prawns and serve
