Prepare the vegetables

Peel and finely chop the onion. Remove the seeds and dice the bell pepper. Peel and mince the garlic cloves.

Sauté the vegetables

In a large, deep skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for 5 minutes or until the vegetables are softened. Add the minced garlic and cook for 1 minute until fragrant.

Stir in the smoked paprika, cumin, cayenne pepper, salt, and black pepper. Add the rice and cook, stirring constantly, for 2 minutes to lightly toast the rice.

Add the canned tomatoes with their juice and the vegetable broth to the skillet. Stir to combine and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes or until the rice is tender and has absorbed most of the liquid.

Add prawns and serve

Stir in the prawns and cook, uncovered, for 5-7 minutes or until the prawns are pink and cooked through. Remove the skillet from the heat. Roughly chop the parsley leaves and sprinkle them over the top. Serve the One-Pan Spicy Prawns and Rice hot.
