Read instructions and get ready to cook

Cook the pasta

Bring a large pot of salted water to a boil. Add 12 oz of penne pasta and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the cooking water.

Prepare the chicken

Cut 1 lb of chicken breasts into bite-sized pieces. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Cook the chicken

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Prepare the pesto ingredients

Peel and mince 3 garlic cloves. Wash and dry 2 cups of fresh basil leaves.

Make the pesto sauce

In a food processor, combine the minced garlic, basil leaves, 1/4 cup of pine nuts, 1/2 cup of grated Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Pulse until finely chopped. With the processor running, slowly pour in 1 tablespoon of olive oil and process until smooth.

Prepare the tomatoes

Wash and halve 1 cup of cherry tomatoes.

Combine the ingredients

In the large skillet, combine the cooked pasta, chicken, pesto sauce, and halved cherry tomatoes. Toss well to coat evenly, adding some of the reserved pasta cooking water if needed to thin the sauce.
