Prepare the pork

Cut the pork shoulder into 1 1/2-inch cubes, trimming away any excess fat.

Prepare the vegetables

Peel and chop the onions. Mince the garlic cloves. Peel and cut the potatoes into 1-inch cubes. Peel and cut the carrots into 1-inch chunks.

Combine ingredients

In a large slow cooker, combine the pork cubes, chopped onions, minced garlic, potato cubes, carrot chunks, chicken broth, tomato paste, paprika, cumin, oregano, bay leaves, salt, and black pepper. Stir well to combine.

Cook the stew

Cover the slow cooker with a lid and cook on low heat for 6-8 hours, or on high heat for 3-4 hours, until the pork is tender and the vegetables are cooked through.

Adjust seasoning

Taste the stew and adjust the seasoning with salt and black pepper, if needed.
