Season the pork chops
Season both sides of the pork chops with salt, black pepper, dried thyme, and dried rosemary.
Prepare the vegetables
Finely chop the onion and mince the garlic cloves. Slice the mushrooms.
Sear the pork chops
Heat olive oil and butter in a large skillet over medium-high heat. Add the seasoned pork chops and sear for 3-4 minutes per side, or until golden brown. Remove the pork chops from the skillet and set them aside.
Sauté the vegetables
In the same skillet, add the chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and become tender, about 5 minutes.
Prepare the sauce
Pour in the chicken broth and heavy cream. Stir to combine and bring the mixture to a simmer. Cook until the sauce has thickened slightly, about 5 minutes.
Finish cooking the pork chops
Return the seared pork chops to the skillet, nestling them into the sauce. Reduce the heat to low, cover the skillet, and simmer for 8-10 minutes, or until the pork chops are cooked through and the internal temperature reaches 145°F (63°C).
Prepare the herbs
Finely chop the fresh parsley leaves.
Finish the dish
Remove the skillet from the heat and stir in the remaining butter and chopped parsley. Taste and adjust the seasoning if needed.
Serve
