Season pork chops

Season both sides of the pork chops with salt and black pepper.

Chop vegetables

Peel and chop the onions. Peel and mince the garlic cloves.

Prepare quince

Peel, core, and cut the quince into 1/2-inch thick slices.

Brown pork chops

In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes per side or until browned. Remove the pork chops from the skillet and set them aside.

Sauté onions and garlic

In the same skillet, add the chopped onions and minced garlic. Sauté for 5 minutes or until the onions are softened and translucent.

Add quince and spices

Add the sliced quince, cinnamon stick, ground nutmeg, remaining 1/2 teaspoon of salt, and remaining 1/4 teaspoon of black pepper to the skillet. Stir to combine with the onions and garlic.

Return pork chops to skillet

Return the browned pork chops to the skillet, nestling them among the quince slices.

Add water and simmer

Pour the water into the skillet and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and let the pork chops and quince simmer for 30-35 minutes or until the pork is tender and the quince is softened.
