Steps

Read instructions and get ready to cook

1
Prepare the vegetables

Peel and cut the potatoes into 1-inch cubes. Cut the cauliflower into bite-sized florets. Peel and finely chop the onion. Peel and mince the garlic cloves and ginger.

2
Sauté the aromatics

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Add the minced garlic and ginger, and cook for 1 minute until fragrant.

3
Add spices and vegetables

Stir in the curry powder, cumin, turmeric, salt, and black pepper. Add the potato cubes and cauliflower florets, and cook for 5 minutes, stirring occasionally.

4
Pour in liquids and simmer

Pour in the coconut milk and vegetable broth. Bring the mixture to a boil, then reduce heat to low and let simmer, covered, for 15 minutes or until the vegetables are tender.

5
Add peas and serve

Add the frozen peas and cook for an additional 5 minutes. Serve the Potato, Cauliflower, and Peas Curry hot over rice.
