Read instructions and get ready to cook
Preheat oven and prepare muffin tin
Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
Combine dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper.
Melt butter
In a small saucepan, melt the unsalted butter over low heat.
Combine wet ingredients
In a separate bowl, whisk together the milk, eggs, and melted butter.
Prepare potatoes
Peel the potatoes and cut them into small chunks. Boil the potatoes until tender, about 15 minutes. Drain and mash the potatoes until smooth.
Grate cheese and chop green onions
Grate the cheddar cheese and finely chop the green onions.
Combine ingredients
Add the mashed potatoes, grated cheese, and chopped green onions to the wet ingredients. Mix well, then fold in the dry ingredients until just combined.
Fill muffin tin
Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
