Prepare the pumpkin

Wash the pumpkin and cut it in half. Remove the seeds and stringy pulp. Cut the pumpkin into small cubes.

Combine ingredients

In a large, heavy-bottomed pot, combine the cubed pumpkin, granulated sugar, lemon juice, and cinnamon sticks. Stir well to combine.

Cook the preserves

Place the pot over medium-high heat and bring the mixture to a boil, stirring frequently. Reduce the heat to low and simmer, stirring occasionally, for 45-60 minutes, or until the preserves have thickened and reached your desired consistency.

Test the preserves

To test if the preserves are ready, place a small plate in the freezer for 5 minutes. Spoon a small amount of the preserves onto the chilled plate and let it sit for 30 seconds. If the preserves wrinkle when you push them with your finger, they're ready. If not, continue cooking and test again in 5-10 minutes.

Remove the cinnamon sticks

Remove the cinnamon sticks from the preserves and discard them.

Sterilize jars

While the preserves are cooking, sterilize the jars and lids by boiling them in water for 10 minutes. Remove the jars and lids from the water and let them air dry on a clean towel.

Fill the jars

Carefully ladle the hot preserves into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean, damp cloth and place the lids on top. Screw the lids on tightly.

Cool and store

Let the jars cool to room temperature, then store them in the refrigerator for up to 3 months or in a cool, dark place for up to 1 year. Enjoy your homemade pumpkin preserves!
