Read instructions and get ready to cook
Preheat the oven
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
Mix dry ingredients
In a medium bowl, whisk together flour, cinnamon, ginger, nutmeg, and salt. Set aside.
Cream butter and sugar
In a large bowl, beat butter and sugar until light and fluffy, about 2-3 minutes.
Add wet ingredients
Add pumpkin, egg, and vanilla to the butter mixture. Beat until well combined.
Combine wet and dry ingredients
Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix.
Form the cookies
Drop tablespoon-sized portions of dough onto prepared baking sheets. Space them about 2 inches apart. Slightly flatten each cookie with the back of a spoon.
Bake the cookies
Bake for 10-12 minutes until edges are set but centers are still soft. Remove from oven and let cool on baking sheets for 5 minutes. Transfer to wire racks to cool completely.
Make the filling

Assemble the cookies
Once cookies are completely cool, spread or pipe about 1 tablespoon of filling onto the flat side of one cookie. Top with another cookie, flat side down. Gently press together.
Chill the cookies
Place assembled sandwich cookies in the refrigerator for 15 minutes to set the filling.
Serve
Bring to room temperature for 5 minutes before serving for best flavor. Store in an airtight container in the refrigerator for up to 3 days.
