Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish and line with parchment paper.
Rinse the quinoa and cook it in 2 cups of water according to package instructions. Let cool.
In a food processor, process the cooked quinoa until smooth.
In a separate bowl, whisk together the cocoa powder, baking powder, and salt.
In another bowl, beat the eggs, melted coconut oil, maple syrup, and vanilla extract until well combined.
Add the quinoa puree and dry ingredients to the wet ingredients. Mix until just combined.
Fold in the dark chocolate chips.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
Allow the brownies to cool in the baking dish for at least 15 minutes before cutting into 16 squares. Enjoy!
