Read instructions and get ready to cook

Cook the pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

Prepare the pesto ingredients

Drain and chop the sun-dried tomatoes. Drain and chop the roasted red peppers. Mince the garlic cloves.

Toast the pine nuts

In a small skillet, toast the pine nuts over medium heat, stirring frequently, until lightly golden and fragrant, about 3-5 minutes. Remove from heat and set aside.

Make the red pesto

In a food processor, combine the chopped sun-dried tomatoes, roasted red peppers, fresh basil leaves, minced garlic, grated Parmesan cheese, toasted pine nuts, olive oil, salt, and black pepper. Pulse until a smooth paste forms, scraping down the sides of the bowl as needed.

Toss the pasta with the pesto

In a large bowl, toss the cooked spaghetti with the red pesto sauce, adding some of the reserved pasta cooking water if needed to thin the sauce and coat the pasta evenly.
