Prepare the rice cooker
Grease the inside of the rice cooker pot with cooking spray or butter.
Prepare the pineapple
Peel, core, and slice the pineapple into 1/2-inch thick rings. Arrange the pineapple rings in a single layer on the bottom of the rice cooker pot. Place a maraschino cherry in the center of each pineapple ring.
Make the caramel sauce
In a small saucepan, melt the unsalted butter over low heat. Stir in the brown sugar until well combined. Pour the caramel sauce evenly over the pineapple rings in the rice cooker pot.
Mix the dry ingredients
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
Mix the wet ingredients
