Read instructions and get ready to cook
Preheat the oven
Preheat the oven to 450°F (230°C).
Prepare the bell peppers
Wash the bell peppers and cut them into quarters, removing the stems and seeds.
Arrange the peppers on a baking sheet
Place the bell pepper quarters on a baking sheet, skin-side up. Drizzle with 1 tablespoon of olive oil.
Roast the peppers
Roast the bell peppers in the preheated oven for 20-25 minutes, or until the skin is charred and blistered.
Prepare the garlic and herbs
While the peppers are roasting, mince the garlic and finely chop the basil and parsley.
Remove the peppers from the oven
Remove the baking sheet from the oven and transfer the roasted peppers to a bowl. Cover the bowl with plastic wrap and let the peppers steam for 10 minutes to loosen the skins.
Peel the peppers
Once the peppers are cool enough to handle, peel off the charred skin and discard.
Prepare the dressing

Combine the peppers and dressing
