Read instructions and get ready to cook
Activate Yeast
In a large bowl, dissolve 1 teaspoon of instant yeast in 3/4 cup of warm water. Let it sit for 5 minutes until frothy.
Prepare Dough
To the yeast mixture, add 2 cups of all-purpose flour and 1 teaspoon of salt. Mix until a dough forms.
Knead Dough
Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
Preheat Oven
Preheat your oven to 400°F (200°C). If you have a baking stone, place it in the oven to heat.
Prepare Herbs and Garlic
Finely chop 1 tablespoon of fresh rosemary and 1 tablespoon of fresh thyme. Mince 2 cloves of garlic.
Shape and Season
Punch down the dough and roll it out on a floured surface into a large circle or rectangle. Transfer to a baking sheet. Brush with 2 tablespoons of olive oil, then sprinkle the chopped herbs and minced garlic evenly over the top.
Bake
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
Serve
Let the flatbread cool slightly on a wire rack before cutting into pieces and serving.
