Read instructions and get ready to cook
Preheat the oven
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
Prepare the potatoes
Wash potatoes thoroughly. Cut into 1/2-inch thick slices.
Prepare the sausages
If using links, slice into 1/2-inch rounds. If using bulk sausage, break into bite-sized pieces.
Prepare the onion and garlic
Peel and dice the onion. Peel and mince the garlic.
Prepare the tomatoes
Wash tomatoes. Cut into medium-sized chunks.
Prepare the cheese
Grate the cheese if not already shredded.
Cook the sausage
Heat oil in a large skillet over medium heat. Add sausage and cook until browned, about 5-7 minutes. Remove with a slotted spoon and set aside.
Sauté the aromatics
In the same skillet, add diced onion. Cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
Season the vegetables
Add half of each seasoning to the onion mixture. Stir to combine. Remove from heat.
Layer the casserole
Arrange half of the potato slices in the bottom of the prepared baking dish. Sprinkle with remaining salt, pepper, paprika, and thyme. Top with half of the sausage. Add half of the onion mixture. Spread half of the tomato chunks. Sprinkle with 1/2 cup of cheese.
Complete the layers
Repeat the layers with remaining potatoes, sausage, onion mixture, and tomatoes. Drizzle with remaining tablespoon of olive oil.
Cover and bake
Cover the dish with aluminum foil. Bake for 35 minutes.
Add cheese and finish baking
Remove foil. Sprinkle remaining 1 1/2 cups of cheese over the top. Return to oven, uncovered. Bake for an additional 15 minutes until potatoes are tender and cheese is bubbly and golden.
Rest and serve
Let the casserole rest for 5 minutes before serving. Serve hot.
