Prepare the crepe batter
In a large bowl, whisk together the all-purpose flour and salt. In a separate bowl, whisk together the eggs and milk. Gradually pour the egg mixture into the flour mixture, whisking constantly to avoid lumps. Melt 1 tablespoon of unsalted butter and whisk it into the batter.
Let the batter rest
Cover the bowl with plastic wrap and let the crepe batter rest in the refrigerator for 30 minutes.
Prepare the filling
While the batter rests, prepare the filling. Clean and slice the mushrooms. Roughly chop the spinach. Peel and mince the garlic cloves.
Sauté the mushrooms
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté until they release their moisture and become tender, about 5-7 minutes.
Add spinach and garlic
Add the chopped spinach and minced garlic to the skillet. Sauté until the spinach wilts, about 2-3 minutes. Remove the skillet from the heat and set aside.
Cook the crepes
Heat a small non-stick pan over medium heat. Melt a small amount of the remaining unsalted butter in the pan. Flip and cook for an additional 30 seconds. Repeat with the remaining batter.
Assemble the crepes
Spoon the mushroom and spinach mixture onto the center of each crepe. Add a dollop of ricotta cheese and season with black pepper. Fold the edges of the crepe over the filling to create a triangular shape.
