Preheat the oven
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Prepare the sauce
Finely chop the onion and mince the garlic cloves. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes or until softened. Add the canned tomatoes, oregano, salt, and black pepper. Simmer for 10 minutes, stirring occasionally.
Roll out the dough
On a lightly floured surface, roll out the pizza dough into a large rectangle, about 12x16 inches. Transfer the dough to the prepared baking sheet.
Assemble the calzone
Spread the tomato sauce evenly over half of the dough, leaving a 1-inch border around the edges. Sprinkle the grated mozzarella cheese and pepperoni slices over the sauce.
Fold and seal the calzone
Fold the empty half of the dough over the filled half, pressing the edges firmly to seal. Brush the top of the calzone with the remaining 1 tablespoon of olive oil.
Bake and serve
Bake the calzone in the preheated oven for 20-25 minutes or until the crust is golden brown and crispy. Remove from the oven and let it cool for 5 minutes before slicing and serving the Sheet Pan Calzone hot.
