Read instructions and get ready to cook
Cook the beef
Heat a skillet over medium. Add 1 lb ground beef, 1 tsp salt, ½ tsp pepper, 1 tbsp chili powder, 1 tsp garlic powder, and 1 tsp onion powder. Cook 8 minutes until browned. Drain fat.
Prepare the pan
Preheat oven to 400°F (200°C). Brush sheet pan with 2 tbsp olive oil.
Assemble the base
Place 4 flour tortillas overlapping to cover the pan. Let edges hang over sides.
Grate the cheese
Grate 8 oz cheddar cheese block using a box grater.
Add beef and cheese
Spread cooked beef evenly over tortillas. Sprinkle grated cheddar cheese on top.
Prepare the crunch layer
Use 2 cups tortilla chips, or bake corn tortillas brushed lightly with oil until crispy. Place evenly over cheese.
Chop veggies
Shred 1 small head of lettuce. Dice 1 tomato into small cubes.
Add sauce and veggies
Spread ½ cup sour cream and ½ cup salsa evenly. Add diced tomato and shredded lettuce.
Top with tortillas
Place remaining 2 flour tortillas on top. Fold overhanging edges inward to enclose filling.
Bake
Place another sheet pan on top as a weight. Bake 20 minutes. Remove top pan, bake 5 more minutes until golden.
Slice and serve
Cool 5 minutes. Slice into squares. Serve hot.
