Preheat the oven

Lightly grease a 4-inch ramekin or oven-safe cup with oil.

If using fresh spinach, wash thoroughly. If using frozen spinach, thaw and squeeze out excess water. Chop the spinach.

Peel and mince the garlic.

Grate the cheese if not already shredded. Set aside 2 tablespoons for topping.
