Prepare ingredients
Peel and cube the butternut squash. Peel, core, and chop the apples. Finely chop the onion and mince the garlic cloves.
Sauté onion and garlic
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.
Add squash and apples
Add the cubed butternut squash and chopped apples to the pot. Stir to combine with the onion and garlic.
Add broth and spices
Pour in the vegetable broth and add the ground cinnamon, ground nutmeg, salt, and black pepper. Stir to combine.
Simmer the soup
Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for 25-30 minutes, or until the squash is tender and easily pierced with a fork.
Blend the soup
Remove the pot from the heat and use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a blender and puree until smooth.
Add cream
Stir in the heavy cream until well combined.
Serve and enjoy
Ladle the Squash & Apple Soup into bowls and serve hot. Enjoy the comforting and delightful flavors of this hearty soup.
