Read instructions and get ready to cook
Season the steak
Season the ribeye steak with salt and black pepper on both sides.
Cook the steak
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the seasoned steak and cook for 4-5 minutes on each side for medium-rare, or longer if desired. Transfer the steak to a plate and tent with foil to keep warm.
Prepare the garlic
Mince the garlic cloves.
Grate the cheeses
Grate the cheddar cheese and Parmesan cheese.
Make the cheese sauce
In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the minced garlic and sauté for 30 seconds. Pour in the heavy cream and bring to a simmer. Slice the steak
Slice the cooked steak against the grain into 1/2-inch thick strips.
