Steps

Read instructions and get ready to cook

1
Season the steak

Season the ribeye steak with salt and black pepper on both sides.

2
Cook the steak

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the seasoned steak and cook for 4-5 minutes on each side for medium-rare, or longer if desired. Transfer the steak to a plate and tent with foil to keep warm.

3
Prepare the garlic

Mince the garlic cloves.

4
Grate the cheeses

Grate the cheddar cheese and Parmesan cheese.

5
Make the cheese sauce

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the minced garlic and sauté for 30 seconds. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and gradually stir in the grated cheddar and Parmesan cheeses until melted and smooth. Season with salt and black pepper to taste.

6
Slice the steak

Slice the cooked steak against the grain into 1/2-inch thick strips.

7
Serve

Arrange the sliced steak on a serving platter and pour the cheese sauce over the top. Serve hot.
