Preheat Oven

Preheat the oven to 400°F (200°C).

Prepare the chicken

Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through. Season the chicken breasts with salt and black pepper on both sides.

Roughly chop the spinach leaves. Peel and mince the garlic cloves. In a bowl, mix the chopped spinach, minced garlic, ricotta cheese, grated Parmesan cheese, remaining salt, and black pepper until well combined.

Spoon the spinach and cheese mixture into the pocket of each chicken breast, dividing it evenly among the four breasts. Secure the openings with toothpicks to keep the filling inside.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.

Transfer the skillet with the seared chicken breasts to the preheated oven. Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
