Preheat the oven

Preheat the oven to 400°F (200°C).

Prepare the ingredients

Rinse the salmon fillets and pat them dry with paper towels. Rinse the spinach and roughly chop it. Crumble the feta cheese. Mince the garlic. Chop the dill leaves. Zest and juice the lemon.

Make the filling

In a bowl, combine the chopped spinach, crumbled feta cheese, minced garlic, chopped dill, lemon zest, salt, and black pepper. Mix well.

Prepare the salmon

Cut a pocket in each salmon fillet by making a horizontal slit in the side of the fillet, being careful not to cut all the way through. Season the fillets with the remaining salt and black pepper.
