Read instructions and get ready to cook
Prepare the oven
Preheat the oven to 375°F (190°C).
Prepare the zucchini
Wash the zucchini and cut them in half lengthwise.
Scoop out the zucchini
Using a spoon, scoop out the seeds and some of the flesh from each zucchini half, leaving a 1/4-inch thick shell.
Prepare the baking dish
Brush a baking dish with olive oil.
Arrange the zucchini
Place the hollowed zucchini halves in the baking dish, cut side up.
Prepare the vegetables
Finely chop the onion, mince the garlic cloves, and dice the tomato.
Cook the beef
In a large skillet, heat the remaining olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula.
Add vegetables to beef
Add the chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is translucent.
Season the mixture
Add salt, black pepper, and dried oregano to the beef mixture. Stir to combine.
Add tomatoes
Add the diced tomato to the skillet and cook for another 2-3 minutes.
Remove from heat
Remove the skillet from heat and let the mixture cool slightly.
Prepare the cheese
Grate the mozzarella and Parmesan cheese if not already shredded.
Add cheese and egg
Stir 1/2 cup of mozzarella, all of the Parmesan, and the beaten egg into the cooled beef mixture.
Fill the zucchini
Spoon the beef and cheese mixture into the hollowed zucchini halves.
Top with cheese
Sprinkle the remaining 1/2 cup of mozzarella cheese over the stuffed zucchini.
Bake
Bake in the preheated oven for 25-30 minutes, until the zucchini is tender and the cheese is melted and golden brown.
Serve
Remove from the oven and let cool for 5 minutes before serving.
