Steps

Read instructions and get ready to cook

1
Soak the corn husks

Place the corn husks in a large bowl and cover them with hot water. Let them soak for at least 30 minutes or until they are soft and pliable. Drain the husks and pat them dry with a clean towel.

2
Prepare the masa dough

In a large bowl, mix the masa harina, baking powder, and salt. In a separate bowl, cream the unsalted butter and sugar until light and fluffy. Add the masa mixture to the butter mixture and mix until well combined.

3
Add corn and milk

Stir in the fresh corn kernels and milk to the masa mixture. Mix until a soft, spreadable dough forms.

4
Assemble the tamales

Lay a corn husk on a flat surface. Spread about 1/4 cup of the masa dough in the center of the husk, leaving a border around the edges. Fold the sides of the husk over the filling, then fold the bottom up. Tie the tamale with a strip of corn husk to secure it.

5
Steam the tamales

Place a steamer basket in a large pot with water just below the basket. Arrange the tamales vertically in the basket, with the open end facing up. Cover the pot and steam the tamales for 1 hour or until the masa dough is firm and pulls away easily from the husk.

6
Serve

Remove the tamales from the steamer and let them cool slightly. Serve the Sweet Fresh Corn Tamales warm, unwrapping them from the husks before enjoying.
